Is a ProductHunt launch ever worth doing if your target market is not founders/entrepreneurs?

If you’re asking the question, you know the answer. The #1 job of any business (even more for SaaS) is knowing where your audience lives. If they’re not on PH, don’t use PH. If they’re not on Twitter, don’t use Twitter. It’s that simple.

If they are asking a question it’s because there’s not enough certainty in the answer.

Your audience will almost never be neatly segmented into a platform, you must discern if a platform is worth the effort, which is what the OP is trying to do.

It’s not that simple.
